Ingredients
  • Fresh Strawberries (washed and sliced)
  • 1 pouch sugar cookie mix
  • ½ c. unsalted butter, softened
  • 1 egg
Vanilla Whipped Cream:
  • 1 c. heavy whipping cream
  • 1 tsp. vanilla
  • 3 Tbsp. sugar
  • 3 tsp. vanilla instant pudding powder
Instructions
  1. Preheat the oven to 375 degrees.
  2. Grease a mini-muffin pan and set aside.
  3. In a medium mixing bowl combine sugar cookie mix, butter, and egg. Mix well with a wooden spoon until all the ingredients are completely combined. Scoop the dough by even tablespoonful’s and roll into a ball. Place the sugar cookie ball into a muffin mold in the greased mini-muffin pan. Repeat until all the sugar cookie mix is used.
  4. Bake for 8-10 minutes or until the edges are golden brown. With the bottom of a wooden spoon gently press the center of each cookie cup down. Transfer cookie cups to a cooling rack and cool completely.
  5. To Make Vanilla Whipped Cream: Combine heavy whipping cream, vanilla, and sugar in a large mixing bowl. Beat on high with an electric mixer until soft peaks form. Add the 3 teaspoons of vanilla instant pudding powder. Beat for 1-2 minutes until the whipped cream becomes thick. Scoop the whipped cream into a plastic baggie. Cut a small corner of the baggie with scissors. Set aside.
  6. To Assemble the Cookie Cups: Pipe a small amount of whipped cream into each cookie cup. Place a sliced strawberry on top. Repeat.
  7. Serve immediately.
Notes
Refrigerate any leftover cookie cups for up to 2 days. Allow to come to room temperature before serving.
